Quick & Easy Tater Tot Casserole

Re-posting this oldy but goody here today.  When I first had this back in high school, the hubs and I were obsessed with this casserole, we made it a lot.  I even made it frequently when we were first married and had little kids.  Eventually though I grew to dislike Tater Tot Casserole or TTC as we like to call it.  So after not making it for a few years, we brought it back into the meal rotation and 3 out of 4 kids ate it so that’s a hit in my book!

Tator Tot Casserole

1 pound ground beef

2 cans green beans

1 can cream of mushroom soup

1 bag of frozen tater tots

I do two things differently with this dish, first, I mix the ground beef in with the green beans and cream of mushroom soup, I do not layer it.  Secondly, I cook the tater tots while I am assembling the casserole so that they crisp up a little more.

Preheat oven to 400 degrees and place tater tots on a baking sheet.  Bake them while you are preparing the ground beef and mixing it together.

Brown ground beef, drain the grease and then put it in a 9×13 pan.  Add two cans of drained green beans and one can cream of mushroom soup and some salt and pepper if you’re feeling sassy.  Mix it all together, the ground beef, the green beans and the cream of mushroom soup.   It’s going to look like this:

Now take your tater tots out of the oven and place them on top of your meat/bean mixture.  My husband likes to put them in rows and I prefer the random placement style.  Throw it back in the oven for about 25 minutes or so.  We are basically warming everything up and crisping up those tots.

Serve it up and enjoy!

    This looks yummy! You could do this as freezer meal too and just leave out the TOTS!! I’m going to add this one to my recipes and make it the next time I do some meals! Easy and yummy! Hope you are having a great week…hugs to you 🙂
