It’s been a few months since I”ve done some Once a Month Cooking and it’s time get back into the swing of things. I’m posting a few recipes I haven’t tried so you can always wait for my review on those if you aren’t feeling very brave. I’m trying to mix things up a bit with some freezer meals, some crock pot, some grilling and some are throw together at the last minute kinds of meals.
It’s May, so in my book, that means it is time to start using the grill again, maybe even eating outside if it doesn’t snow again! I will still be using my crock pot but adding in some grilling recipes as well, like these Grilled Marinated Pork Chops.
Lately I’ve been craving some grilled chicken with salad and some fresh veggies and lemon flavoring. This was my favorite salad last year and I’ll probably be making it a lot this summer. Very easy to make and tastes so fresh! I love some lemon, feta, red onion, ok, all of it really! If you have picky kids like I do, then just grill them up some chicken on the side to have with some rice or pasta.

We can’t have some grilling without hamburgers! Ranch and cheddar sound like a great combination so I’m looking forward to trying these out from a wonderful website called Once a Month Meals.

Another Lemon love of mine, trying out this soup as I have some orzo just sitting in the cupboard and this sounds fresh and yummy as well, thanks to Christy who blogs at The Girl Who Ate Everything.
Switching gears, this chili has been requested by the hubby and I aim to please so I’ll be throwing this in the crock pot on a busy day. Thank you Pioneer Woman for having a chili recipe my family will eat. I personally have to add some jalepenos and salsa to this as I think it’s pretty bland but I like spicy things and most of the rest of my family doesn’t.
So if I’m making a chili for the family, I will make a chili for myself as well. I do love this so! A little more spice than the chili recipe above, White Chicken Chili.
At the Water’s Edge created a yummy Chicken Alfredo Pasta Bake that I am sure most of my family will eat. I do love some pasta with sauce, veggies and chicken. Always a winner in my mind. I also learned from a few months ago, it’s better if I make my own Alfredo Sauce instead of buying the jar sauce as the jar sauce doesn’t taste that good. Here is the recipe for the Alfredo Bake.

Keeping the Italian theme going, it’s time for some yummy Crock Spot Spaghetti Sauce. I love this stuff! I could eat it without noodles, just a big bowl of meat and tomato goodness. I make my sauce from this lasagna recipe and throw it in the crock pot. So feel free to make the lasagna and freeze it or freeze just the sauce for a night when you don’t have a lot of time and cook up some spaghetti noodles to serve with it.
Lauren from the blog Healthy Delicious has created a recipe that sounds killer, Pulled Pork Macaroni & Cheese. Do I think my kids will eat this, probably not. But you never know so I’m going for it!
I have leftover ham bones from Easter so I need to create some yummy soup with those! I found this one at Allrecipes so hoping it’s a good one.
Switching gears, a few months ago, we had some friends over and I decided to try to do a Chipotle copy cat dinner of Pork Carnitas with Rice and Beans.
These recipes for Pork Carnitas and Cilantro Lime Rice from SkinnyTaste were awesome! I found this Black Bean Recipe from Andrea at Savings Lifestyle and it was easy and yummy.
Thanks to Second Chance to Dream, this Crock Pot Beef and Noodles was another hit at our house so I’ll be cooking it up again.
