Zucchini Bread

This is my grandma’s recipe and one my kids all love.  We do not add chocolate chips to this.  It’s so delicious on its own.  I’m mostly posting this here so my kids can find the recipe.  😉

 

Makes two loaves

Preheat oven to 325 degrees.

3 eggs

2 c sugar

1 c vegetable oil (I use olive oil and it comes out great)

2 c ground zucchini

3 c flour

1 tsp salt

1 tsp baking soda

1/4 tsp baking powder

3 tsp cinnamon

3 tsp vanilla

 

Beat the eggs until light and fluffy.  Slowly add in sugar and beat well.  Add in oil, vanilla and zucchini.  Finally add in all the dry ingredients.

Bake in a floured and greased bread pan for 70 min or a toothpick in the center comes out clean.

 

Slather with butter and enjoy!
